Christmas Ride with Kajsa Ålund

True magic means for me adding some festive touches to home which make the days all more cheery and memorable all winter long.

Poinsettias still my one most favorite Christmas flowers. For many years now this cheery plant has been brightening up my home.

My day started with a Christmas ride at Urban Ride in Stockholm, then I went with my boyfriend to get a big Xmas brunch at Urban Deli in Södermalm, and we bought some food. Now our home is full of yummy food for my tummy.

Back to home, I wanted to try baking and have a healthy little Christmas. If you love chocolate then you’ll love this recipe.

A delicious healthy treat for dessert or a breakfast.

Here is the recipe. Hope you will try it and enjoy it!

Prep Time

Servings: 12 muffins

Cook Time: 40 minutes

Ingredients

  • 1 1/2 cups white whole wheat flour
  • 1/2 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, warmed to liquid
  • 2 tbsp Greek Yogurt
  • 1/2 tbsp vanilla extract
  • 1 egg
  • 1/4 cup milk
  • 1 1/2 tbsp strongly brewed coffee

Instructions

  1. Preheat oven to 375 degrees. Lightly oil muffin pans or line with paper liners.
  2. Use a whisk to combine all dry ingredients in a large mixing bowl.
  3. Use whisk to combine all wet ingredients in a separate mixing bowl and whisk until ingredients emulsify and become uniform. Add wet ingredients to dry ingredients and mix well.
  4. Spoon batter into muffin pan until cups are 2/3 of the way full. If using chocolate chips, drop a couple on top of the muffin batter.
  5. Cook muffins for 40 minutes or until a toothpick comes out of the center cleanly.

Lately I have been working extra hours on different projects. I felt so tired on many days that I wanted to skip my gym.

They say: “A kiss a day can keep the doctor away.”

Kissing is intimate. It gets to the core of your heart and spirit because it’s such a lovely way to express and receive love and affection.

We live in a hard world, sometimes it is extra difficult to survive being a human being. We all face that bad day and sometimes we that bad day which lasts for several years. We struggle, we succeed or we fail. We lose jobs, love, money, even friends.

Then come that moment when everything seems cloaked in the dark.

I thought of what I usually do when I feel under stress. I usually think that first things first, I make sure to eat, I go to the gym and exercise the stress out.

Exercise causes a release of endorphins and I love the feelings of joy after a workout.

One other thing I do when I’m stressed, I shop flowers. Specific colors can invigorate, harmonize and relax me. Flowers create a different mood and causes an immediate effect on the energy.

Sweden, a winter wonderland!!

Good evening my oldies!!

Today was another holy moly cold day, -8C but it feels like -14C, hahahaha and my fingers were gonna fall off (I wore gloves with sheep fur inside) and my toes suffer as well, they were freezing to death even with two woollen socks.

Still the winter lights can be so attractive to take photos and to enjoy the magical sky.

I went with my partner to look for Canon Cameras as I’m thinking seriously to buy one, then we couldn’t resist buying some flowers and tulips for our house.

Now at home eating hot food and enjoying the company of my cats while watching a movie and drinking some Green Tea with Spearmint  – Kusmi Thé Nanah à la menthe – which we got from the “Tehuset JAVA”.
